Each time i cook filipino fried noodles is different.Like this one,I used seafoods but i added fresh celery and mushroom and at the end fresh spring onions for flavor i add a little bit oyster sauce.I also add some red bell pepper and for final i cut the fresh lemon then i separate the juice on it then on our plate we add the juice it is replacement for kalamansi since we don't have it here!For me i didn't overcook the pancit.Yup!Each of us has their own version!

Yummy Janese version pancit
